Blueberry Bird's Nests

Spring is here! Ok, well, almost.  If nothing else, it is for sure time to start planning fun treats for spring and Easter, and boy do I have a good one.  This was so delicious - sweet and tart and fresh! And so cute - did I say that one yet? I mean, look.



It was also nice and fast. Which, with kids, is a HUGE plus.  Here's most of what you need:



First, melt your white chocolate.  YUM.



Add 1.5 cups of rice crispies - I used these.



Spoon them out onto parchment paper to make the base of your nests.



I made 7 since there were 7 people at my house today. You can make them bigger or smaller as needed.  Stick them in the freezer to harden.



Next, mix up one block of softened cream cheese, juice of 1/2 a lemon, 3-4 drops of lemon essential oil, and 3 TBSP of powdered sugar. I added a pinch of turmeric to make it a light yellow, but that is completely optional.  Place in a frosting bag, or just a plastic sandwich bag like I did.



Pipe onto the nests, add some coconut (optional), and place some blueberries on for the final touch.



Voila! Blueberry Bird Nests!

Ingredients:
1 bar of white chocolate
1.5 cups rice crisps
1 8 oz block of cream cheese
3 TBSP powdered sugar
Juice from 1/2 lemon
3-4 drops lemon essential oil
Blueberries
Sandwich bag
Turmeric (optional)
Coconut (optional)

Melt chocolate and add crisps. Place on parchment paper in nests, and place in freezer.  Mix cream cheese, lemon juice, lemon oil, sugar and a pinch of turmeric.  Pipe frosting onto nests, sprinkle with coconut (optional) and add blueberries on top. Enjoy!
